Instructions
- Brown the Meat: Heat a skillet over medium-high heat and add the ground beef. Break it up as it cooks until browned and fully cooked through. Stir in the taco seasoning and red enchilada sauce, bringing the mixture to a simmer. Once simmering, remove the skillet from heat.
- Prepare the Tortillas: Wrap the tortillas in a damp paper towel and microwave for 30 to 60 seconds until they become soft and pliable. Brush one side of each tortilla with the olive oil.
- Assemble the Tacos: Place the tortillas on a baking sheet with the oiled side down. On half of each tortilla, spread 2 tablespoons of cheese, then top with 1/4 cup of the cooked beef mixture, followed by an additional 2 tablespoons of cheese. Fold the tortilla over to cover the filling.
- Bake the Tacos: Arrange all assembled tacos in a single layer on the baking sheet. Bake in a preheated oven at 375°F (190°C) for 16 minutes, or until the tortillas are crispy and the cheese has melted completely.
- Rest and Serve: Allow the tacos to cool for about 3 minutes before serving to help the filling set and to prevent burns.
