Instructions
- Sauté Aromatics: In a large pot, heat olive oil over medium heat. Add the diced onion and sauté for 3–4 minutes until softened to develop a flavorful base for the soup.
- Add Seasoning: Stir in the minced garlic, Italian seasoning, and red pepper flakes (if using) and cook for about 1 minute until fragrant, enhancing the depth of the broth.
- Cook Noodles: Pour in the chicken broth and bring the mixture to a boil. Add the broken lasagna noodles and cook for 8–10 minutes or until they are al dente, stirring occasionally to prevent sticking.
- Add Cheese and Chicken: Reduce the heat to low, then stir in the cooked shredded chicken, heavy cream, mozzarella, Parmesan, and ricotta cheeses. Continue stirring until the cheeses melt completely and the soup becomes creamy.
- Season and Add Greens: Season the soup with salt and pepper to taste. If using spinach, stir it in and cook for 1–2 minutes until wilted, adding freshness and color.
