Ingredients
Scale
Potatoes
- 1 lb (450 g) baby potatoes, washed and halved
- 2 tablespoons olive oil
- Salt and pepper, to taste
Creamy Garlic Sauce
- 1 tablespoon butter
- 4 cloves garlic, minced
- ½ cup heavy cream
- ¼ cup grated Parmesan cheese
- 1 tablespoon chopped fresh parsley
Instructions
- Preheat the oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prepare for roasting the potatoes.
- Toss potatoes with oil and seasoning: In a large bowl, toss the halved baby potatoes with olive oil, salt, and pepper until evenly coated. Spread them out in a single layer on the prepared baking sheet.
- Roast the potatoes: Roast the potatoes in the preheated oven for 25-30 minutes, turning halfway through to ensure even cooking, until they are tender inside and golden brown on the outside.
- Sauté garlic: While the potatoes roast, melt the butter in a skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until it becomes fragrant but not browned.
- Make the creamy sauce: Stir in the heavy cream and simmer the mixture for 3-4 minutes, allowing the sauce to thicken slightly.
- Add Parmesan and finish sauce: Remove the skillet from heat and stir in the grated Parmesan cheese until completely melted and smooth, creating a rich garlic cream sauce.
- Combine and serve: Transfer the roasted potatoes to a serving dish, pour the creamy garlic sauce over them, and garnish with the chopped fresh parsley for a fresh, flavorful finish.
Notes
- You can use red or yellow baby potatoes as alternatives.
- For a lighter version, substitute heavy cream with half-and-half or a milk alternative, but sauce will be less thick.
- To add extra flavor, sprinkle some smoked paprika or rosemary on the potatoes before roasting.
- This dish pairs well with grilled meats or as part of a vegetarian meal.
- Make sure not to overcook the garlic to avoid bitterness.
