Instructions
- Sauté Aromatics: Heat the coconut oil in a large pot over medium heat. Add the chopped onion and cook for about 4 to 5 minutes until softened.
- Add Garlic and Ginger: Stir in the garlic and grated ginger and cook for another minute until fragrant.
- Incorporate Spices: Add the red curry paste and curry powder, cooking for about 1 minute while stirring to release the flavors.
- Add Liquids: Pour in the vegetable broth and coconut milk, stirring until well combined.
- Add Vegetables and Simmer: Add the sliced carrots, bell pepper, and mushrooms, then bring the soup to a gentle simmer. Cook for about 10 to 12 minutes until the vegetables begin to soften.
- Season Flavorfully: Stir in the soy sauce, lime juice, brown sugar, salt, and black pepper.
