Description

Delicious and chewy Chocolate Chip Peanut Butter Granola Cookie Bars that combine the nutty flavors of peanut butter with the sweetness of chocolate chips and honey. These bars are perfect for a quick snack or breakfast on the go and come together easily with wholesome ingredients.

Ingredients

Scale

Dry Ingredients

  • 1 ½ cups rolled oats
  • ½ teaspoon cinnamon
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup granola

Wet Ingredients

  • ½ cup peanut butter (unsweetened)
  • ¼ cup honey or maple syrup
  • ½ teaspoon vanilla extract

Add-ins

  • ½ cup chocolate chips

Instructions

  1. Preheat Oven: Preheat the oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper to prevent sticking and ensure easy removal of the bars.
  2. Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, cinnamon, baking soda, salt, and granola. Stir thoroughly to evenly distribute all the dry ingredients.
  3. Combine Wet Ingredients: In a separate bowl, mix the peanut butter, honey or maple syrup, and vanilla extract until the mixture is smooth and well blended.
  4. Mix Wet and Dry: Pour the wet mixture into the dry ingredients and stir until everything is combined uniformly.
  5. Add Chocolate Chips: Gently fold in the chocolate chips, making sure they are evenly spread throughout the mixture.
  6. Press Into Pan: Transfer the mixture into the prepared baking dish and press it down evenly with a spatula or your hands to form a compact layer.
  7. Bake: Bake in the preheated oven for 15–18 minutes, or until the edges turn golden brown and the center is set but still chewy.
  8. Cool and Slice: Allow the bars to cool completely in the pan before slicing them into squares to ensure they hold their shape.

Notes

  • Use parchment paper to easily lift the bars out of the pan without sticking.
  • Substitute maple syrup for honey to make it vegan-friendly.
  • Store bars in an airtight container at room temperature for up to 5 days or refrigerate to extend freshness.
  • To add extra crunch, consider mixing in chopped nuts or seeds.
  • For softer bars, reduce baking time by 2 minutes and check for doneness.
