Ingredients
Scale
Macaroon Mixture
- 4 large egg whites
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 3 cups sweetened, shredded coconut
- 1/2 cup mini chocolate chips
Chocolate Dip
- 1/2 cup mini chocolate chips
- 1 1/2 teaspoons coconut oil
Instructions
- Preheat Oven: Preheat your oven to 325°F (160°C) to prepare for baking the macaroons.
- Prepare Macaroon Batter: In a mixing bowl, whisk together the egg whites, granulated sugar, vanilla extract, and salt until well blended and slightly frothy. This step is key to achieving the light and airy texture.
- Add Coconut and Chocolate Chips: Gently fold in the shredded coconut and 1/2 cup mini chocolate chips into the egg white mixture until evenly combined.
- Scoop Onto Baking Sheet: Using a spoon or cookie scoop, drop dollops of the macaroon mixture onto a baking sheet lined with parchment paper, spacing them evenly.
- Bake Macaroons: Place the baking sheet in the preheated oven and bake for 15-20 minutes, or until the macaroons are golden brown on the edges but still soft inside.
- Melt Chocolate Dip: While the macaroons bake, melt 1/2 cup mini chocolate chips with 1 1/2 teaspoons coconut oil in a microwave-safe bowl, heating in 20-second bursts and stirring until smooth and shiny.
- Dip Macaroons: Once the macaroons are completely cooled, dip the bottoms or sides into the melted chocolate to coat. Place on parchment paper to set.
Notes
- Ensure egg whites are at room temperature for better volume.
- Use sweetened shredded coconut for best flavor and texture.
- Allow macaroons to cool completely before dipping to prevent melting the chocolate coating.
- Store macaroons in an airtight container at room temperature for up to 3 days.
- You can skip the chocolate dip for a simpler version.
