Description

Indulge in these delightful Chocolate Cheesecake Stuffed Strawberries, a perfect bite-sized treat combining juicy ripe strawberries with a rich, creamy chocolate cheesecake filling. Easy to prepare in just 20 minutes, these elegant desserts are topped with crushed Oreo biscuits for added crunch. Ideal for parties, gatherings, or a sweet snack, they’re as visually appealing as they are delicious.

Ingredients

Scale

Strawberries

  • 20 large ripe strawberries

Filling

  • 100 ml double (heavy) cream
  • 100 g cream cheese
  • 30 g icing sugar (confectioners’ sugar)
  • 1 tsp vanilla extract
  • 1 tbsp sifted cocoa powder
  • 30 g dark chocolate, melted

Topping

  • 5 crushed Oreo biscuits (or gluten-free chocolate biscuits with creamy center discarded)

Instructions

  1. Prepare the Strawberries: Remove the leaves from the strawberries and use a melon baller to carefully scoop out the center of each strawberry to create a small well for the cheesecake filling. Then, slice a tiny bit off the bottom of each strawberry so they can stand upright on a serving tray.
  2. Whip the Cream: In a large bowl, whisk the double cream until soft peaks form. This will create the light, airy texture needed for the cheesecake filling.
  3. Combine Ingredients: Add the cream cheese, icing sugar, vanilla extract, and sifted cocoa powder to the whipped cream. Whisk until all ingredients are fully combined and the mixture is smooth.
  4. Add Melted Chocolate: Pour in the melted dark chocolate and whisk again vigorously until the mixture becomes light, fluffy, and smooth, perfect for piping.
  5. Fill the Piping Bag: Spoon the cheesecake mixture into a piping bag fitted with a fluted tip. This will help create a decorative swirl when filling the strawberries.
  6. Pipe the Filling: Carefully pipe the cheesecake mixture into each strawberry, filling the hollowed centers completely and swirling a little on top to resemble mini cupcakes.
  7. Arrange and Top: Place each stuffed strawberry into petit fours cases or directly onto a serving tray. Sprinkle the crushed Oreo biscuits over the top of each strawberry to add texture and flavor.
  8. Chill or Serve: Serve the chocolate cheesecake stuffed strawberries immediately, or refrigerate until ready to serve, allowing flavors to meld and filling to firm up slightly.

Notes

  • Use ripe but firm strawberries to ensure they hold their shape after hollowing.
  • Discard the creamy center of the Oreo biscuits if you prefer a less sweet topping.
  • The filling can be prepared a few hours in advance and refrigerated in a sealed container.
  • Make sure the dark chocolate is melted and slightly cooled before adding to avoid melting the cream cheese.
  • For a gluten-free version, substitute Oreo biscuits with certified gluten-free chocolate biscuits.
  • These strawberries are best served within 24 hours for optimal freshness.
