Ingredients
Scale
Spring Rolls
- 8 spring roll skins
- ½ cup cooked, shredded chicken
- 1 large basil leaf per roll (8 leaves)
- ½ cup shredded carrots
- ½ cup sliced cucumber
- ½ avocado, sliced
- 4 ounces rice noodles, cooked
Dipping Sauce
- ¼ cup rice wine vinegar
- 2 tbsp soy sauce
- 1 tbsp sesame seed oil
- 1 tbsp sugar
- 1 tbsp sweet chili sauce
Instructions
- Prepare the dipping sauce: In a small bowl, mix together rice wine vinegar, soy sauce, sesame seed oil, sugar, and sweet chili sauce until the sugar dissolves and the ingredients are well combined.
- Season the noodles: Toss the cooked rice noodles with 2 tablespoons of the prepared dipping sauce to infuse them with flavor. Set aside.
- Soften the spring roll skins: Fill a shallow plate with warm water. Dip one spring roll skin into the water just until it softens, then carefully lay it flat on a clean surface to prepare for filling.
- Assemble the rolls: On the center of the softened spring roll skin, place a large basil leaf, followed by a portion of the seasoned rice noodles, shredded carrots, cucumber slices, shredded chicken, and a slice of avocado.
- Roll the spring rolls: Fold in the sides of the spring roll skin tightly over the filling, then roll it from the bottom upwards to seal all the ingredients inside, forming a neat roll.
- Repeat assembly: Repeat the softening, filling, and rolling steps for the remaining spring roll skins and ingredients until all 8 rolls are assembled.
- Serve: Serve the chicken spring rolls immediately accompanied by the reserved dipping sauce for dipping.
Notes
- Use warm water to soften the spring roll skins to prevent tearing.
- Feel free to substitute cooked shrimp or tofu for the chicken for a different variation.
- For added crunch, include shredded lettuce or bean sprouts inside the rolls.
- Prepare the dipping sauce in advance to allow the flavors to meld perfectly.
- Consume the spring rolls shortly after assembly for optimal freshness and texture.
