Description

This Chicken Lo Mein recipe features tender chicken strips stir-fried with fresh vegetables and a savory soy-based sauce, tossed with perfectly cooked noodles for a quick and delicious homemade Chinese-inspired meal.

Ingredients

Scale

Proteins & Oils

  • 1 Tablespoon canola oil
  • 1 pound chicken breasts, cut into thin strips
  • 1 Tablespoon sesame oil

Vegetables

  • 3 cloves garlic, minced
  • 2 Tablespoons ginger, grated
  • 1 (8 oz) mushrooms, thinly sliced (baby bellas or shiitake)
  • 1 small onion, finely chopped
  • 1 ½ cup Napa cabbage, finely shredded
  • 1 cup matchstick carrots

Sauce & Broth

  • 2 Tablespoons low sodium soy sauce
  • ¼ cup low sodium soy sauce
  • ¼ cup low sodium chicken broth
  • 1 teaspoon cornstarch
  • 1 teaspoon light brown sugar

Pasta

  • 12 oz pasta, cooked according to package directions

Instructions

  1. Heat the oil: Heat the canola oil in a large pan or wok over medium-high heat to prepare for cooking the chicken.
  2. Cook chicken: Add the chicken strips to the pan and cook until they are browned and cooked through, about 5-7 minutes, then remove from the pan and set aside.
  3. Sauté aromatics: In the same pan, add the minced garlic and grated ginger and sauté for 1-2 minutes until fragrant to build flavor.
  4. Cook vegetables: Add the sliced mushrooms, chopped onion, shredded Napa cabbage, and matchstick carrots. Stir-fry for 3-4 minutes until the vegetables are tender but still crisp.
  5. Make sauce: In a small bowl, whisk together the chicken broth, cornstarch, sesame oil, low sodium soy sauce, and light brown sugar to create the flavorful sauce mixture.
  6. Combine chicken and noodles: Return the cooked chicken strips to the pan, then add the cooked pasta noodles.
  7. Add sauce and finish cooking: Pour the prepared sauce over the chicken, vegetables, and noodles, stirring well to coat everything evenly. Cook for 2-3 minutes until the sauce thickens and the dish is heated through.
  8. Serve: Serve the Chicken Lo Mein immediately while hot for the best taste and texture.

Notes

  • Use low sodium soy sauce and broth to control the salt content.
  • For extra flavor, consider adding green onions or a splash of oyster sauce.
  • Pasta can be substituted with traditional lo mein noodles if available.
  • To make it vegetarian, swap chicken for tofu and use vegetable broth instead.
