Ingredients
Scale
Dry Ingredients
- 2 cups rolled oats
- 1 cup graham cracker crumbs
- 1 cup rice cereal
- 1 cup mini marshmallows
- 1 cup chocolate chips
Wet Ingredients
- 1/2 cup honey (or maple syrup or brown rice syrup)
- 1/4 cup butter
Instructions
- Melt butter and honey: In a saucepan over medium heat, melt the butter and honey together. Continue cooking until the mixture starts to bubble and thickens slightly, creating a sticky syrup that will bind the bars.
- Combine dry ingredients: In a large bowl, mix rolled oats, graham cracker crumbs, and rice cereal until evenly combined, forming the base of your granola bars.
- Mix wet and dry: Pour the warm honey and butter mixture over the dry ingredients. Stir thoroughly to ensure every dry component is coated with the syrup for optimal binding and flavor.
- Fold in marshmallows and chocolate chips: Allow the mixture to cool for a few minutes so it’s easier to work with, then gently fold in the mini marshmallows and chocolate chips to preserve their texture.
- Press mixture into pan: Line or grease a 9×13-inch baking dish and firmly press the granola mixture evenly into the pan, ensuring it is tightly packed to help the bars hold their shape.
- Cool and slice: Let the mixture cool completely at room temperature. Once set, slice into 16 bars and serve or store as desired.
Notes
- You can substitute honey with maple syrup or brown rice syrup if preferred.
- Pressing the mixture firmly into the pan is key to ensuring the bars hold together well.
- Store the bars in an airtight container at room temperature for up to a week or refrigerate for longer freshness.
- Feel free to add nuts or dried fruits to customize your bars.
