Description

This Caprese Roasted Asparagus recipe combines tender roasted asparagus with juicy cherry tomatoes, melted mozzarella, fresh basil, and a tangy balsamic glaze for an easy, flavorful side dish perfect for any meal.

Ingredients

Scale

Vegetables

  • 1 lb asparagus, trimmed
  • 2 cups cherry tomatoes, halved

Other Ingredients

  • 2 tbsp olive oil, for drizzling
  • Kosher salt, to taste
  • Black pepper, to taste
  • 2 cups shredded mozzarella cheese
  • Fresh chopped basil, for garnish
  • Bottled balsamic glaze, for garnish

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with aluminum foil and lightly spray it with non-stick cooking spray to prevent sticking.
  2. Arrange Vegetables: Lay the trimmed asparagus in a row on one side of the prepared baking sheet. Place the halved cherry tomatoes on the opposite side, keeping them separated.
  3. Season and Oil: Drizzle 1 tablespoon of olive oil evenly over the asparagus and season with kosher salt and black pepper to taste. Repeat this process for the cherry tomatoes with the remaining tablespoon of olive oil, salt, and pepper.
  4. Roast Vegetables: Put the baking sheet in the preheated oven and roast the asparagus and tomatoes for 10 minutes, allowing the vegetables to soften and start roasting.
  5. Add Cheese and Finish Roasting: After 5 minutes of roasting, remove the baking sheet and sprinkle the shredded mozzarella evenly over the asparagus. Return the sheet to the oven and roast for the remaining 5 minutes or until the cheese is melted and golden brown.
  6. Serve and Garnish: Transfer the roasted asparagus to a serving plate, top with the roasted cherry tomatoes, garnish generously with fresh chopped basil, and drizzle with bottled balsamic glaze for a sweet and tangy finish.

Notes

  • Trim the woody ends of the asparagus before cooking for the best texture.
  • You can substitute fresh mozzarella slices for shredded if preferred, but shredding helps it melt evenly.
  • Use a quality balsamic glaze to enhance the flavors with a perfect balance of sweetness and acidity.
  • For extra flavor, add minced garlic or a sprinkle of red pepper flakes before roasting.
  • This dish is best served immediately while the cheese is warm and melty.
