Ingredients
Scale
Cookie Cups
- 1 package refrigerated sugar cookie dough
Filling
- 1 cup ricotta cheese
- 1/2 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 1/4 cup mini chocolate chips
Topping
- 1/4 cup chopped pistachios
Instructions
- Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Lightly spray a mini muffin tin with non-stick cooking spray to prevent sticking.
- Form Cookie Cups: Divide the refrigerated sugar cookie dough into 24 equal pieces. Press each piece firmly into the bottom and up the sides of each mini muffin cup to form a cup shape.
- Bake Cookie Shells: Place the muffin tin in the oven and bake the cookie cups for 10-12 minutes, or until the edges turn a golden brown color.
- Create a Well: Immediately after removing from the oven, press the center of each cookie cup gently with a small shot glass to form a well for the filling.
- Cool Completely: Allow the cookie cups to cool completely in the muffin tin to set their shape before filling.
- Prepare Filling: In a medium bowl, combine the ricotta cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy.
- Add Chocolate Chips: Fold the mini chocolate chips into the ricotta mixture evenly.
- Fill Cookie Cups: Spoon the ricotta mixture into each cooled cookie cup, filling the wells generously.
- Garnish and Serve: Top each filled cookie cup with chopped pistachios for added crunch and flavor. Serve immediately and enjoy your delightful cannoli cookie cups!
Notes
- You can substitute ricotta with mascarpone cheese for a richer filling.
- Chill the filled cookie cups in the refrigerator for 30 minutes if you prefer a firmer filling.
- For a nut-free version, omit the pistachios or replace them with crushed cookies or mini chocolate chips.
- Use a small glass or round tool to shape the cookie cups precisely.
