Description

This Cajun Chicken Alfredo is a creamy, flavorful twist on the classic Italian pasta dish. Tender, spicy Cajun-seasoned chicken cubes are sautéed to perfection and combined with a rich garlic and heavy cream Alfredo sauce. Tossed with fettuccine pasta and finished with Parmesan cheese and fresh chives, this dish is a comforting and indulgent meal ready in just 40 minutes, perfect for a satisfying weeknight dinner.

Ingredients

Scale

Pasta

  • 1 lb fettuccine pasta, uncooked

Chicken

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 3 tablespoons Cajun seasoning

Sauce

  • ¼ cup butter
  • 2 tablespoons garlic puree
  • 3 cups heavy cream
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • â…” cup shredded Parmesan cheese
  • 2 tablespoons chopped chives

Instructions

  1. Cook Pasta: Cook fettuccine according to package directions until al dente. Drain well and set aside to keep warm.
  2. Season and Cook Chicken: In a bowl, toss the chicken cubes thoroughly with the Cajun seasoning to coat evenly. Heat a large skillet over medium-high heat and add the chicken. Cook for about 8 minutes, stirring occasionally, until the chicken is browned on the outside and cooked through.
  3. Make Sauce: To the skillet with the cooked chicken, add butter and garlic puree. Stir continuously until the butter melts and the garlic is fragrant. Pour in the heavy cream along with salt and black pepper. Bring the mixture to a boil, then reduce the heat to low, cover the skillet, and let it simmer for 8 minutes, stirring occasionally to prevent sticking and encourage thickening.
  4. Combine and Finish: Remove the lid from the skillet and add the cooked fettuccine pasta. Stir well to combine and cook for an additional 4 minutes, allowing the pasta to absorb the sauce fully. Then stir in the shredded Parmesan cheese until it melts completely, creating a creamy consistency. Finally, sprinkle with chopped chives for a fresh touch and serve the dish immediately while hot.

Notes

  • Adjust the amount of Cajun seasoning according to your preferred spice level.
  • For a lighter version, substitute heavy cream with half-and-half, but note the sauce may be less thick.
  • Use freshly grated Parmesan cheese for best flavor and smooth melting.
  • To prevent overcooking, keep an eye on the chicken while sautéing to maintain juiciness.
  • Chives add a mild onion flavor and a pop of color, but you can substitute with parsley if preferred.
