Yogurt Base

- 1 teaspoon vanilla extract
- Pinch of salt

- Remaining 1/2 cup fresh blueberries

Instructions
- Prepare Blueberry Swirl: In a small saucepan, combine 1/2 cup blueberries, sugar, and lemon juice. Simmer over medium heat for 5-7 minutes, stirring occasionally until the mixture thickens. Mash gently with a fork and allow it to cool completely before using.
- Prepare Yogurt Base: In a medium bowl, whisk together the Greek yogurt, honey, vanilla extract, and a pinch of salt until smooth. Taste and adjust the sweetness if needed.
- Assemble Yogurt Bites: Line a muffin tin with liners. Spoon the yogurt mixture into each liner, filling them halfway.
- Add Blueberry Swirl: Drop spoonfuls of the cooled blueberry swirl on top of the yogurt base in each liner.
- Swirl Mixture: Use a toothpick or skewer to gently swirl the blueberry mixture into the yogurt base, creating a marbled effect.
- Add Toppings: Sprinkle the remaining fresh blueberries and optional toppings such as granola, chopped nuts, or shredded coconut over the top of each yogurt bite.
- Freeze: Carefully transfer the muffin tin to the freezer and freeze the yogurt bites for at least 3-4 hours or until they are completely solid.
- Serve: Once frozen, remove the yogurt bites from the molds and serve immediately. Drizzle with extra honey if desired for added sweetness.
