Description

Blueberry Swirl Yogurt Bites are a healthy and delicious frozen treat featuring luscious Greek yogurt swirled with a homemade blueberry compote. These bite-sized snacks are easy to prepare, naturally sweetened with honey, and perfect for a refreshing snack or dessert any time of the day.

Ingredients

Scale

Blueberry Swirl

  • 1/2 cup fresh blueberries
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon lemon juice

Yogurt Base

  • 2 cups plain Greek yogurt (full-fat or non-fat, your preference)
  • 1/4 cup honey, plus more for drizzling (optional)
  • 1 teaspoon vanilla extract
  • Pinch of salt

Toppings (Optional)

  • Remaining 1/2 cup fresh blueberries
  • Granola
  • Chopped nuts
  • Shredded coconut

Instructions

  1. Prepare Blueberry Swirl: In a small saucepan, combine 1/2 cup blueberries, sugar, and lemon juice. Simmer over medium heat for 5-7 minutes, stirring occasionally until the mixture thickens. Mash gently with a fork and allow it to cool completely before using.
  2. Prepare Yogurt Base: In a medium bowl, whisk together the Greek yogurt, honey, vanilla extract, and a pinch of salt until smooth. Taste and adjust the sweetness if needed.
  3. Assemble Yogurt Bites: Line a muffin tin with liners. Spoon the yogurt mixture into each liner, filling them halfway.
  4. Add Blueberry Swirl: Drop spoonfuls of the cooled blueberry swirl on top of the yogurt base in each liner.
  5. Swirl Mixture: Use a toothpick or skewer to gently swirl the blueberry mixture into the yogurt base, creating a marbled effect.
  6. Add Toppings: Sprinkle the remaining fresh blueberries and optional toppings such as granola, chopped nuts, or shredded coconut over the top of each yogurt bite.
  7. Freeze: Carefully transfer the muffin tin to the freezer and freeze the yogurt bites for at least 3-4 hours or until they are completely solid.
  8. Serve: Once frozen, remove the yogurt bites from the molds and serve immediately. Drizzle with extra honey if desired for added sweetness.
  9. Store: Keep any leftover yogurt bites in an airtight container in the freezer for up to 2-3 weeks to maintain freshness and flavor.

Notes

  • Use full-fat or non-fat Greek yogurt based on your preference and dietary needs.
  • Honey amount can be adjusted or omitted for a lower sugar version.
  • Make sure the blueberry swirl is fully cooled before swirling it into the yogurt to maintain texture.
  • For easy removal from the muffin tin, use silicone liners or let the bites sit at room temperature for a few minutes before popping them out.
  • Add your favorite toppings for extra texture and flavor, or keep it simple with just blueberries.
