For the Chicken Skewers
- 1 ½ pounds boneless, skinless chicken thighs, cut into bite-sized pieces
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- 2 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- Salt and pepper to taste
- Wooden skewers, soaked in water
For the Bang Bang Sauce
- ½ cup mayonnaise
- 2 tablespoons sweet chili sauce
- 1 tablespoon sriracha (adjust to taste)
- 1 tablespoon honey
- 1 teaspoon lime juice
Instructions
- Marinate the Chicken: In a large bowl, combine the chicken pieces with soy sauce, sesame oil, rice vinegar, minced garlic, grated fresh ginger, salt, and pepper. Mix thoroughly to coat the chicken evenly, then cover and refrigerate for at least 30 minutes or up to 4 hours for deeper flavor.
- Prepare the Bang Bang Sauce: While the chicken marinates, whisk together mayonnaise, sweet chili sauce, sriracha, honey, and lime juice in a small bowl until smooth and well combined. Set aside.
- Preheat the Grill: Heat a grill or grill pan to medium-high heat to get it ready for cooking the skewers.
- Assemble the Skewers: Thread the marinated chicken pieces onto the soaked wooden skewers evenly, ensuring the pieces are secure and spaced for even cooking.
- Grill the Skewers: Place the skewers on the preheated grill and cook for 10–12 minutes, turning occasionally, until the chicken is cooked through with a slight char on the edges.
- Serve: Transfer the grilled chicken skewers to a platter and either drizzle them with the prepared bang bang sauce or serve the sauce on the side for dipping. Optionally, garnish with chopped green onions or sesame seeds.
Notes
- Chicken thighs can be substituted with chicken breasts if you prefer leaner meat.
- Prepare the bang bang sauce and marinate the chicken a day in advance to save time on the day of serving.
- These skewers can also be served over cooked rice or wrapped in lettuce leaves for a fresh, low-carb option.
