Description

Delight in these Baked Apple Pie Rice Paper Rolls that combine the warmth of apple pie spices with the light crispness of baked rice paper. Filled with tender, cinnamon-spiced apples and baked to golden perfection, these rolls make a perfect healthy dessert or snack.

Ingredients

Scale

Filling

  • 2 medium apples, peeled, cored, and finely diced
  • 1 tablespoon coconut oil or butter
  • 2 tablespoons brown sugar or maple syrup
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg (optional)
  • 1 teaspoon lemon juice
  • 1 teaspoon cornstarch (optional, helps thicken the filling)

For Assembly

  • 6 rice paper wrappers
  • Cooking spray or additional oil for brushing

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to prepare for baking the rolls.
  2. Prepare Apple Filling: In a skillet over medium heat, melt the coconut oil or butter. Add the diced apples, brown sugar or maple syrup, cinnamon, nutmeg, and lemon juice. Cook for 5–7 minutes until the apples are soft and syrupy. If using cornstarch, stir it in and cook for an additional minute. Allow the mixture to cool slightly.
  3. Soften Rice Paper Wrappers: Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for about 10–15 seconds until it becomes pliable but not overly soft. Lay the softened wrapper flat on a clean surface.
  4. Assemble Rolls: Spoon 2–3 tablespoons of the apple filling onto the bottom third of the rice paper wrapper. Fold the sides inward and then roll tightly like a spring roll to enclose the filling.
  5. Place on Baking Sheet: Arrange the rolls seam-side down on the prepared baking sheet. Repeat the process with the remaining wrappers and filling.
  6. Brush with Oil: Lightly brush or spray the rolls with oil to help them crisp up during baking.
  7. Bake Rolls: Bake for 20–25 minutes, flipping the rolls once halfway through, until they are golden and crisp on both sides.
  8. Serve: Allow the rolls to cool slightly before serving. Enjoy them as-is or with a dusting of powdered sugar or a dipping sauce such as caramel or vanilla yogurt.

Notes

  • For a vegan option, use coconut oil and maple syrup.
  • Optional nutmeg adds depth of flavor but can be omitted if preferred.
  • Cornstarch helps thicken the filling but can be skipped for a looser filling.
  • Ensure rice paper wrappers are dipped just long enough to soften without becoming too fragile.
  • Serve with caramel sauce, vanilla yogurt, or a sprinkle of powdered sugar for extra sweetness.
