Pomodoro Sauce

- 2 (28-oz) cans crushed tomatoes
- 1 Tbsp sugar
- 2 cups water
- Salt and pepper, to taste
- ½ cup fresh basil, chopped
- ¼ tsp red pepper flakes

- Prepare the aromatics: Heat the extra-virgin olive oil in a large skillet over medium-high heat. Add the finely chopped onion and cook until it becomes translucent. Then add the minced garlic and cook for an additional 30 seconds, allowing the garlic to release its aroma without burning.
- Add main ingredients and simmer: Pour in the crushed tomatoes, sugar, water, and season with salt and black pepper. Bring the mixture to a low boil, then reduce the heat to medium-low and let it simmer gently for 20 to 30 minutes. Stir occasionally to prevent sticking and help the flavors meld.
- Finish the sauce: Stir in the chopped fresh basil leaves and red pepper flakes. Continue cooking until the sauce thickens to your desired consistency. Taste and adjust seasoning as needed. Finally, toss the sauce with your favorite cooked pasta to serve immediately.
