Noodles and Sauce
- 8 ounces sweet potato noodles (dangmyeon)

Meat and Vegetables
- 1/2 pound beef (ribeye or sirloin), thinly sliced
- 1 small carrot, julienned
- 1 small red bell pepper, thinly sliced
- 1 small yellow bell pepper, thinly sliced
- 1/2 onion, thinly sliced
- 3 cups spinach
- 3 cloves garlic, minced
- 4 shiitake mushrooms, sliced
Instructions
- Prepare the noodles: Cook the sweet potato noodles according to the package instructions until they become soft. Once cooked, drain them well and rinse under cold water to stop the cooking process and prevent sticking.
- Cook the beef: Heat 1 tablespoon of sesame oil in a large skillet or wok over medium-high heat. Add the thinly sliced beef and stir-fry until browned and cooked through, about 2-3 minutes. Remove the beef from the skillet and set aside.
- Sauté the vegetables: In the same skillet, add the remaining 1 tablespoon sesame oil. Add the minced garlic, sliced onions, julienned carrots, and sliced bell peppers. Stir-fry for 3-4 minutes until they start to soften but still retain some crunch.
- Add mushrooms and spinach: Toss in the sliced shiitake mushrooms and continue cooking for another 2 minutes. Then add the spinach and stir until it wilts down completely.
- Combine beef, noodles, and sauce: Return the cooked beef to the skillet with vegetables. Add the cooked sweet potato noodles on top. Pour in the soy sauce, sugar, and black pepper. Toss everything thoroughly to combine and heat through evenly.
- Finish and serve: Sprinkle the stir-fried Japchae with sesame seeds and give it a final gentle toss. Serve warm or at room temperature, garnished with additional sesame seeds if desired.
