Description

Ajvar is a classic Balkan pepper spread made from roasted red bell peppers and eggplants, blended with garlic, olive oil, and vinegar to create a smoky, flavorful condiment. Perfect as a side, dip, or spread, this recipe offers a slightly sweet and tangy taste with an optional spicy kick from chili flakes.

Ingredients

Scale

Main Ingredients

  • 6 large red bell peppers
  • 2 medium eggplants
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon white vinegar
  • Salt, to taste

Optional

  • 1/4 teaspoon chili flakes (for a spicy version)

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and arrange the red bell peppers and eggplants on it.
  2. Roast Vegetables: Roast for 30-40 minutes, turning occasionally, until the skins are charred and the vegetables are soft.
  3. Steam to Loosen Skins: Remove from the oven and cover the vegetables with plastic wrap or a lid to let them steam for 10-15 minutes. This helps loosen the skins for easy peeling.
  4. Peel and Deseed: Peel off the charred skins from the peppers and eggplants, then remove their seeds carefully.
  5. Blend Ingredients: In a food processor, combine the roasted vegetables, minced garlic, olive oil, vinegar, and salt. Blend until smooth or slightly chunky, according to your preference.
  6. Add Spice (Optional): If using chili flakes, add them into the mixture and blend briefly again to incorporate the spice.
  7. Store and Serve: Transfer the ajvar to a jar or serving dish. Store it in the fridge for up to one week or freeze for longer storage.

Notes

  • Roasting the peppers and eggplants until the skin is charred imparts a smoky flavor essential to authentic ajvar.
  • Be sure to steam the vegetables to make peeling easier and improve texture.
  • You can adjust the texture by blending less or more depending on whether you prefer a chunky or smooth spread.
  • Ajvar tastes great served chilled or at room temperature with bread, grilled meats, or as a dip.
  • Freezing ajvar in airtight containers helps preserve the flavor if you want to store it for longer periods.
  • For a milder version, omit the chili flakes or reduce the amount.
