Instructions
- Preheat Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and arrange the red bell peppers and eggplants on it.

- Steam to Loosen Skins: Remove from the oven and cover the vegetables with plastic wrap or a lid to let them steam for 10-15 minutes. This helps loosen the skins for easy peeling.

- Blend Ingredients: In a food processor, combine the roasted vegetables, minced garlic, olive oil, vinegar, and salt. Blend until smooth or slightly chunky, according to your preference.
- Add Spice (Optional): If using chili flakes, add them into the mixture and blend briefly again to incorporate the spice.
- Store and Serve: Transfer the ajvar to a jar or serving dish. Store it in the fridge for up to one week or freeze for longer storage.
